When I was in my 20’s and early 30’s (i.e. life before kids), I loved having brunch with friends. There’s just something about getting up late and lazily enjoying an indulgent brunch on a Sunday morning. Many of my close friends have shared personal and candid thoughts or musings over a glass of mimosa or two. Some of those moments were major bonding period with these precious gals. Now that I have kids, I just do not get to have brunch often. During the school year, our Sundays are usually filled with Sunday school, birthday parties or extra-curricular activities. So I was delighted when my sister invited us over for brunch this past weekend. She made some tasty and very filling entrees including corn bread, Spinach Mushroom Feta Strata, Blueberry Polenta Yogurt Cake, some bacon (what’s brunch without bacon?) and a berry medley. Simply delicious. What about you? Are you up for some lazy and indulgent Sunday mornings this summer?
